Mushroom-and-Asparagus Pizza

Dish Info

Mushroom-and-asparagus pizzas are savory delights featuring a medley of mixed mushrooms, shaved asparagus, creamy goat cheese, tangy pecorino, and a hint of crushed red pepper on golden pizza crusts.

Ingredients

4 tbsp.olive oil, divided, plus more for baking sheets 12 oz.mixed mushrooms (such as cremini, button, oyster, and shiitake), thinly sliced Kosher salt Freshly ground black pepper 1 lb.pizza dough, at room temperature 5asparagus stalks, thinly shaved 4 oz.(about 1 cup) fresh goat cheese, crumbled 4 oz.(about 1 cup) grated pecorino cheese 1/4 tsp.crushed red pepper Mixed green salad, for serving

Step 1

Preheat the oven to 500°F and prepare two baking sheets by lightly oiling them. This ensures the pizzas cook evenly and don't stick to the sheets.

Step 2

Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Add the mixed mushrooms, season with salt and pepper, and sauté until they turn golden brown and become tender, which usually takes around 8 to 10 minutes.

Step 3

While the mushrooms are cooking, divide the pizza dough into four equal pieces and gently stretch each piece into a 7-inch circle. Place the dough circles onto the prepared baking sheets, ready for topping.

Step 4

Distribute the sautéed mushrooms evenly over the dough circles, followed by the thinly shaved asparagus. Crumble the fresh goat cheese over the pizzas, ensuring it's evenly distributed.

Step 5

This step adds a golden sheen to the crust while also enhancing its flavor. Transfer the baking sheets to the preheated oven and bake the pizzas for 10 to 12 minutes, rotating the sheets halfway through.
